I love the flavour of apples with pork, and particularly sausage. Real comfort food for our late autumn nights. The simple flavours of this dish are absolutely delicious!
pork sausages 1 lb pumpkin, cubed
1 tbsp olive oil 1 tbsp ground sage
2 apples, each cut into 8 wedges 1 tsp maple syrup
1 red pepper cut into 8 wedges salt & pepper to taste
1 medium onion cut into 8 wedges
Preheat oven to 375. With a fork, poke sausages several times. Place everything in a plastic bag and shake it well to evenly distribute seasonings. Toss everything in the baking dish lined with foil and bake uncovered for 30-40 minutes.
