Hurricane Sandy wheeled through Toronto Monday night leaving parts of the city without power and messing up the daily commute for many people.
The storm caused one fatality here but not as much destruction and death like in New York City and parts of New Jersey.
I made a big batch of stew on Monday just in case we would lose power. It sat in the fridge for 2 days and became even more flavorful than the day I made it. We ate it last night with some whole wheat pasta and it was delicious.
Easy Beef Stew
1 ½ beef cube 2 stalks of celery
2 tbsp olive oil 2 large cloves of garlic
1 large carrot 14 oz can of strained tomatoes
1 medium onion Salt and pepper to taste
Toss beef cubes in flour with salt and pepper. Brown in heated oil over medium heat for 5 minutes; set aside. Chop carrot, onion, celery and garlic in the food processor. Sauté over medium heat in a large pot for 10 minutes. Add browned beef and strained tomatoes. Add a little water if it’s too thick for your liking. Simmer on a low heat for up to 2 hours.
